Does Salesforce automatically save my work when I am doing Lab1b? That way if I can't finish the lab, can I go back to the lab to finish it later?

Yep, generally, you can stop where you are and come back later to pick up where you left off.
(If you were in the middle of some sequence of 10 steps that end with clicking Save and you only did some of them & then logged out before getting to the Save step, you would need to pick up at the start of those 10 steps again, obviously, but everything you did before those 10 would still be there.)
