Your screenshot shows you’re on the Fields and Relationships page for the Pitch object. You’re supposed to have clicked on Page Layouts, just below the Fields and Relationships option.
Go to Setup > Object Manager > Pitch and the click on Page Layouts on the left and then you can continue with Step 61 and go from there.
