I got to step 27 and wasn’t able to add “email”and “mobile” to the visible fields list. Where did I go wrong?

Sorry you're stuck but there's almost always a pretty easy fix! Do NOT try to start all over again, eg. uninstall Max's Pitch Package, etc. That can make things worse.

Well then probably either you skipped the steps where you were supposed to add those fields to Meeting or you clicked through the Next, Next, etc too fast and so they got created but didn't get a chance to have their visibility turned on. Remember back in Lab 1a when Max said to click slowly through the Next, Next... so that was so that the pages you were skipping had a chance to fully load & execute their code which included turning on the visibility of the field you're adding.
Either way, I'm surprised you were able to import the Meeting data without any errors or warnings, at least. Or did you see some but still got the import to work anyway?
If you want, you can do these 3 steps so I can access your account and take a look. Let me know when you've done them, ok?
1. Log in and click on the round character icon (upper right corner) and click Settings
2. On the left, under My Personal Information, click Grant Account Login Access below that
3. On the row for The Max Labs Project Support, use the --No Access-- pull-down menu to select 1 month and click Save
